ZWILLING Vier Sterne 20 cm review

A German-made 20 cm knife with Zwilling’s FRIODUR ice-hardening, a deep bolster and a seamless handle join — the construction that keeps water out of the handle.

The bottom line The seamless handle and the German origin are the real arguments. Check the bolster reaches short of the edge before committing to sharpening it for twenty years.

What you are getting

A 20 cm German-made chef’s knife in Zwilling’s FRIODUR ice-hardened steel, with a deep bolster and a seamless, non-slip handle.

The handle join

Seamless. It sounds cosmetic and it is the single most practical detail on the knife: no gap to trap water, no seam to fail, nothing to work loose over a decade of washing.

The bolster

Deep, which gives balance and a finger guard. Worth checking whether it runs all the way to the cutting edge — a full bolster blocks the stone at the heel, and over years of sharpening the heel stands proud.

What the listing does not give

A hardness figure. Zwilling describes the process rather than publishing HRC, so edge retention is described rather than quantified.

Questions people actually ask

What is ice hardening?

A cryogenic step in the heat treatment. Zwilling states their FRIODUR process gives long-lasting sharpness and corrosion resistance. It is a maker’s process description rather than a measured figure.

Why does a seamless handle matter?

A gap between handle scale and tang collects water and food, and that is where knives fail and where hygiene complaints come from — long before any steel gives up.
